Indian Style Basmati Rice - recipe

http://allrecipes.com/recipe/indian-style-basmati-rice/detail.aspx

I absolutely loved this.  Served this with Indian Sticky Chicken & a warm walnut salad.  The flavors together were wonderful.  Hubby loved it too.  Now who says you have to serve turkey on Thanksgiving?

Indian Sticky Chicken - recipe

This was my main dish for Thanksgiving.  We both enjoyed this.  I have never had Indian food before and loved the flavors of this dish.

Warm Walnut Spinach Salad

http://www.myrecipes.com/recipe/warm-walnut-spinach-salad-50400000124501/

I used romaine lettuce instead of spinach.  I also made my own walnut oil & toasted the walnuts for the salad and tossed at the end.  Very good.

Walnut Oil

Was not able to find walnut oil in our local grocery store so decided to make my own.  I am sure this is going to be at the fraction of the cost.  Will be using this in a recipe that I am making later today (hot walnut salad).

Hot Ricotta Dip

Making this now.

Cream Cheese Pound Cake

In the oven now.  Batter tastes nice & sweet.  DON'T use a handmixer (this is all I hand).  It blew my breaker once & did put a strain on it.  Will have to invest in a real mixer.

Molten Cupcake

Just got done putting this in the oven.  I did not add the frosting since I don't like frosting.  This was requested by hubby for Thanksgiving.  Hope it turns out good :0)....only chocolate thing on the menu and I am totally addicted to chocolate.

1st batch wasn't the way I would have liked it.  I didn't measure out the second batch and added a little extra cake batter & squished the lava inside so it would spread a little bit more inside the cake batter.  I also cooked the second batch for 18 minutes.  Second batch sooooo much better.  This recipe is a keeper.

This is what I will be cooking for Thanksgiving dinner along with a few other things.  It looked good and since it's just Jeff and I why not try something new.

Blogging???

You know to be honest with you I have no idea what I am doing.  I talked with my friend Mary and told her I feel like I am writing a diary that the whole world could see if they were interested. She said yes that is what this can be.  Well since I have no followers, no commenters, no interaction of any time am I doing this right?  Am I just writing a diary for myself?  Not complaining but since I don't have someone holding my hand during this process and know no one that blogs what in the blazes am I doing?

Thanksgiving Dinner

It's just going to be Jeff & I tomorrow, of course our babies & puppies.  I decided this year not to do the traditional turkey & fixins.  Instead I am going to make 2 Indian dishes.  I have never made these before but the picture of the chicken dish sure looks yummy.  I then looked for a rice dish to go with it.  Adding a hot walnut salad, couple of desserts, deviled eggs (requested by hubby, he likes my secret ingredient) and a dip.  The eggs & the dip will be for early feasting.

As for Thanksgiving, I never liked the food part of it.  I loved spending time with my family, playing games & cards, watching tv...just the "normal" stuff our family did.  Sometimes the holiday(s) were tough.  My mom would try so hard and if something upset her she was intolerable to the whole family.  Until aunt, uncle & grandma would show up.  Oh and not let us forget that she would burn the buns each and every time.  She would just forget about them.  Our table was full and we loved what wasn't burnt, so it was always a good laugh.

Today my parents are gone, both died at an early age.  Both my sisters live in Ohio and I live in Georgia.  My son is in Ohio and my daughter is here in Georgia, but is visiting in Alabama.  I am ok with this, I just miss the noise.

Thanksgiving is about family.  And I am grateful that I have the memories, they keep the me toasty & warm :0)

Love & miss you mom & dad.

Collard Greens Recipe

I had made these for the hubby to take to work yesterday.  Now I am a damn yankee and he is a good ol' southern boy.  I was told it was a hit and the double batch was gone.  When one of his coworkers raved about it, hubby said what???  my yankee bitch, lol....well at least I can cook up some greens.
