Garlic Bread Dipping Sauce

The other night we had a Greek salad with homemade dressing.   It was also way past our dinner time, so even though there was chicken breasts in the salad I knew we needed something more.  So I tossed a couple of garlic knots into the oven & woohoo, more food to fill our bellies.

And of course you just have to dip bread into the dressing, which was absolutely awesome!!!!  So tonight, made some pasta & a little bit more of that dressing with a tweek, and used it for a garlic bread dipping sauce

1/8 cup virgin olive oil
1/4 cup red wine vinegar
1 lemon, squeezed juice
1/8 tsp oregano
2 tsps minced garlic
sprinkle of feta cheese
1/4 cup kalamata olives
salt & pepper to taste

I put the feta cheese & olives into a food processor.  Just whipped it up really quick, wanted it to have texture, but not so much that you are eating huge chunks.  Put all ingredients into a dipping bowl.

Can I just say how yummy that was???  We especially liked the tangy taste of the vinegar.
